Taxis, St Lucia seems to have higher taxi rates that other places, we were planning on taking the Bus to Soufriere, but we were able to get a good deal by going outside the cruise terminal gates, there is another group of Taxis. we were offered $25 each round trip (tour) and going to the Volcano, waterfalls and beach (for 7 of us, our friends were going to do something different) then down to $140 (total), our friends decided to go with us so he did $200 for 13 of us ($15 each round trip) our guy was Kevin, good guy, if you go there especially with a bigger group like we did text or call him, he could meet you and do similar to what he did for us his # is 1-758-715-6565 here is more info on taxis
Buses, are a good option that will give you a little taste of local life, just plan time on the return for the times that busses are full and you have to wait for a next one, or if you are at a start location they usually hang out a while until the bus is most of the way full to head out, more info on St Lucia buses
Volcano, Sulfur Spring, Bannana Farm, Waterfall and Soufriere.
we took up the taxi driver on a little tour, first they took us to an over look of the area the cruise ship was docked (city of Castries), then we stopped by a banana field and tried some ketchup and BBQ sauce made from bananas, it was actually pretty good, we stopped in a small town, Caneries, then went to the Sulfur hot springs (they say that you drive through the volcano, i guess we did but was nothing recognizable as a volcano), Sulfur spring was kind of cool (cost about $5 for adults, $250 kids), you soak in the hot spring water then rub sulfur mud all over you, its suppose to be good for you, then we went to the waterfall ($3 per person), it was ok, not as cool as i had hoped, and the water was cold, last stop was at the beach in Soufriere, there was alot of seaweed washed up from some recent weather but good views from there.

Beach in Soufriere, we were going to swim here but ran out of time, and the weather over the last week had brought in alot of sea weed.
